But It’s Not My Birthday

My cupcake addiction is getting so bad that I think people are starting to feel sorry for me. 

Last week, I went home for lunch and checked my mail. There was what looked to be a birthday card in the mail for me from my boyfriend’s family. 

All that was going through my head was, “That’s weird. It’s not my birthday or any special holiday. Why are they sending me a card?” 

Well I opened it, and not only did the song sing “Celebration” to me, but there were cupcake coupons and a $25 gift certificate to Yum Cupcakery, my favorite cupcake shop in Gainesville, FL. 

In the card, there was a note written… “We don’t normally feed people’s addictions, but in this case we’ll make an exception.” 

Unbelievably Thoughtful. This made my day.

Lauren, I don’t know you but I could use a sugar free cupcake, any ideas???????


Unfortunately, I can’t say I’ve ever made sugar free cupcakes. However, if you’re able to have Splenda, all of the recipes I have read say you can substitute splenda for sugar.

As far as the frosting goes, you might have more of a problem there. While substituting Splenda for the sugar is fine, I’m almost positive you still need the powedered sugar for the recipes I’ve seen.

If you are looking for low-fat options, I normally substitute egg beaters for the eggs and sometimes even go as far as substituting apple sauce for the oil.
