Funfetti Freak

A few weeks ago, I made some funfetti cupcakes. For me, it’s all about presentation and of course taste (which in my eyes, it’s hard to beat Funfetti!).

The cupcake baking extravaganza all started like this:

I called my boyfriend to see what he wanted to do for dinner. He told me he was working late so I offered to bring him food to his office. He said that sounded great so I asked what he was in the mood for. He, of course, had no idea. I had no idea either. I told him I would call him back after we thought about it for a little bit. Here’s how it played out after that:

Me: How about Tropical Smoothie for dinner? I hear they have good salads and wraps.

Mark: Tropical Smoothie? That’s random.

Me: Well… (long pause) Tropical Smoothie is right next to Yum Cupcakery and all I really want is a cupcake.

Mark: Unbelievable. Ok. See you soon.

So, I went to Tropical Smoothie and ordered food. When it was ready, I wanted to put it in the car before I went into the cupcake shop. In the process, I managed to spill my iced tea all over me and my car. At this point, I just wanted my cupcake. I cleaned myself up, cleaned my car up and walked a few doors down only to find that the cupcake store, which had just opened the month before, was “closed for renovations.”

That’s where the Funfetti came in. I had to address my cupcake need so I baked some Funfetti cupcakes.

The photo above is made using Funfetti mix (yes, I was lazy and made these from a box). Most of the time when I have a cupcake craving, I just want my cupcake as quickly as possible! I colored the icing with yellow food coloring and used my new Mechanical Pastry Bag from Pottery Barn to frost them!

I ran out of frosting for the middle ones!

My problem was solved. I now had cupcakes to last me for a few days!

Your cupcakes are beautiful… but I know you THE WORLD’S BEST HOMEMADE CUPCAKE BOOK (i.e., Martha Stewart’s Cupcakes) at home… so this funfetti cake mix crap has got to end.

Rant being said… funfetti is a good choice. Martha Stewart strawberry is better though. I’m pretty sure that and the coconut recipe I just turned into a cake are my favorites so far!

I forgot “own” in the first sentence…

Well, baking from a box isn’t pure evil (like bitch slapping your sistah, etc.) so Funfetti box away, gurrl. Anything to get that rapid yummee cupcake fix when you are jonesing and can’t get a bakery made option and/or don’t have time to bake from scratch.

I admit to having rare cravings for boxed and super-processed food-like stuff such as Chef Boyardee pizza in a box (http://www.chefboyardee.com/tasteefood/kits.jsp) or Count Chocula or some such and then I imbibe, FD&C #7 be damned.

Sure scratch made, organic, blah, blah, blah, etc., are all “better” but what the hay… live a little, right?! Lol.
